Cucumber Salad-
4 mini cucumbers, thinly sliced (or 2 English cucumbers)
½ small red onion, thinly sliced
1 package Flavor Bomb tomatoes, halved
For the Homemade Italian Vinaigrette
½ cup olive oil
3 tbsp red wine vinegar
2 tbsp fresh lemon juice
1 tbsp Dijon mustard
1 tbsp honey
1 tsp Italian seasoning
2 cloves garlic, minced
Salt and pepper to taste
Add the sliced cucumbers, red onion, and halved Flavor Bomb tomatoes to a large bowl. In a small jar, mix together the olive oil, red wine vinegar, lemon juice, Dijon mustard, honey, Italian seasoning, minced garlic, salt, and pepper until well combined. Pour the homemade Italian vinaigrette over the vegetables and toss everything together until evenly coated. Refrigerate for 15 to 30 minutes before serving to let the flavors really set in.
You can easily double or triple this recipe for more people! I love to add extra ingredients to mix it up, like salami, Parmesan, feta, etc!
